It is important to us that our casks are matched to our spirit type. We have a very light and fruity spirit which easily takes on the character of the cask, but we want to be able to taste the sweet fruitiness of the spirit as well as the cask influence.
We use sherry casks which have been used for many years in the “solera system” of maturation in the sherry industry, so the harsher wood character has been removed and the wood has been deeply impregnated with maturing sherry over a long time.
This is in contrast to many other well-known distilleries, who use new casks seasoned for a time with sherry rather than previously used for maturing sherry. We think this makes us rather special!

Our ex-Sherry release #146 has been bottled at 61% ABV and is a thrilling example of the effect the Oloroso sherry cask has on our liquid. With Cherry Madeira Cake, plum jam and figs taking centre stage in this dram, it is not one to miss!
Conversely, if you're looking for something with a bit more of a tangy sweetness then you should definitely try ex-Sherry release #158. Spicy up front with apple and cinnamon, sultanas and a hint of coconut, this is a really exciting wee dram also bottled at cask strength (61.1% ABV).
