Today (8th March) we join the global celebration of women's accomplishments in social, economic, cultural, and political spheres. A Peated twist in maturation
We don’t distil peated spirit, but remain true to our Lowland roots of a light spirit (the opposite end of the scale in character from peated spirit). For our peated releases, we rather use casks which have previously been used to mature peated spirit in (and some quite well known peated spirit where we are not allowed to mention the names!). This peatiness is imbued into the spirit from the cask and not from the peated barley, giving a light complexity which perfectly compliments the Kingsbarns character which we are becoming so well-known for. Our special ex-Sherry Casks
It is important to us that our casks are matched to our spirit type. We have a very light and fruity spirit which easily takes on the character of the cask, but we want to be able to taste the sweet fruitiness of the spirit as well as the cask influence. We use sherry casks which have been used for many years in the “solera system” of maturation in the sherry industry, so the harsher wood character has been removed and the wood has been deeply impregnated with maturing sherry over a long time.
