With the Lowlands being an under-represented region for Scotch malt whisky, and in keeping with the provenance of the distillery, we set out with the aim of producing a light and fruity character of spirit in a Lowland style.
The spirit has certainly evolved a little over time as the copper in the stills conditioned and the distillery settled down, and this has been fascinating to see. Thankfully, there have never been any off-notes in the new-make from starting up and I am very pleased with the character.
Our spirit is very light on the nose with orchard fruits leading the way. Peaches, apricots and pears are all present along with some floral, citrus elements and light cereal notes adding complexity. The taste follows the nose with nectarines coming to mind and a sweet finish on the palate. It's going to be intriguing to see how it matures!
